Salt | 1/2 teaspoon |
Garlic | 1 teaspoon |
Green chilies | 3 to 4 |
Cilantro leaves | 50g |
Lemon juice | 2 teaspoon |
Turmeric powder | 0.5 teaspoon |
Instructions to make glutney (Chutney)
Prepare the veggies
- Peel and roughly chop the onions and tomatoes
- Chop green chilies into small pieces
- Grind cilantro leaves
- Mix all these veggies into a bowl
- Grind the ginger and crush the garlic
- Keep ginger and garlic in a separate bowl
Heat the pan
- Heat it over a medium flame and add some oil to the pan
- Add 1/2 teaspoon cumin, and mustard seeds, and cook until they begin to crack
- Add the minced ginger, 1-2 teaspoons of dry chili flakes, and crushed garlic
- Cook for about 2 minutes or until they begin to smell good
Add the veggies
- Add the diced tomatoes and chopped onions
- Add the chopped green chilies to the pan
- Now add 250g of dried raisins and cook for a while
Add other spices
- Sprinkle the clove powder, black peppercorn, and turmeric powder over the mixture
- Stir the mixture thoroughly
- Add a little boiling water and cook until the chutney becomes thick, rich, and reduced
Finishing
- Add 1 teaspoon salt, and fresh lemon juice as desired
- Allow the mixture to steam for a while
